Headlined by celebrated Chef Aniket Chatterjee, the pop-up event represents a groundbreaking fusion of traditional Indian culinary techniques with innovative global influences. Guests will experience an immersive five-course dining experience that reimagines regional Indian flavors through a sophisticated, modern lens.
Chef Ritu Dalmia, a pioneering culinary entrepreneur renowned for challenging traditional cooking paradigms, brings her signature bold approach to the Maldivian resort. Having launched Delhi’s first standalone Italian restaurant at just twenty-two, Dalmia has since established an acclaimed international restaurant portfolio that continues to push culinary boundaries.
The meticulously curated menu promises an extraordinary sensory expedition, beginning with playful reinterpretations of classic Indian street food. Vegetarian guests will be equally delighted with options such as paneer peeli mirch tikka accompanied by spring onion curry, ensuring a comprehensive culinary experience that caters to diverse palates. The menu strategically balances traditional techniques with contemporary presentation, creating a narrative that celebrates India’s rich culinary heritage.
Highlighting the event’s exclusivity, guests can choose between intimate oceanfront dinners and relaxed beach grills under the starlit Maldivian sky. The beach grill dinner at Shimmers Beach on 10 June will be priced at USD 225 plus taxes per person, while other evenings feature a five-course set menu at USD 195 plus taxes per person.
“The Maldives has always been a special country for me,” says Chef Dalmia. “It is a thrill to bring Atrangi to Jumeirah Olhahali Island, where we can showcase community-inspired dishes while celebrating the best produce the Maldives has to offer.”
The culinary journey culminates with an indulgent selection of traditional Indian desserts, including pistachio soan papdi, mini jalebi with rabri, and other exquisite mignardises that promise to leave a lasting impression on discerning diners.
This limited-time collaboration represents more than just a dining experience—it’s a cultural exchange, a celebration of culinary artistry, and a testament to the innovative spirit of contemporary Indian cuisine.
